Recipe Box: Butternut Squash Risotto


It has been so long! Things have been mad here. The kitten has been a little ill and my boyfriend has been setting up a new business all of his own so I've been kept busy even outside of work.

But at last, I finally got to do a little cooking yesterday. I felt like something hearty and comforting after the weather took a cold turn so I cooked up a little risotto! Bonus: it's fairly healthy!


This recipe is about enough for two people.

Ingredients:

  • 200g butternut squash cut into small cubes.
  • 1 tbsp olive oil.
  • 50g broccoli, sliced lengthways.
  • Half an onion, finely chopped.
  • 1 garlic clove, finely chopped.
  • 1 tbsp fresh sage, chopped.
  • 1/4 tsp dried chilli flakes.
  • 150g risotto rice.
  • 65ml white wine.
  • 500ml vegetable stock.
  • Pepper for seasoning.
  • 30g soft cheese.

To the kitchen!

  • Preheat the oven to 200oC.
  • Put the butternut squash into the roasting tin and mix in half of the olive oil.
  • Cook for 10 minutes and then add the broccoli and cook for another 20 minutes.
  • In the meantime, heat the rest of the oil in a large frying pan and cook the onion for 5 minutes or until it becomes soft. 
  • Add the garlic, sage and chilli flakes and cook for another minute.
  • Stir in the risotto rice, pour in the wine and simmer until the wine is all absorbed.
  • Stir in the vegetable stock a little at a time and cook for around 25 minutes or until the stock is absorbed and the rice is tender. 
  • Season with pepper.
  • Stir through the cream cheese and the vegetables and serve.
  • Enjoy!

Health Kick: Parsley Tea


I will soon be starting a detox plan, eek! I'm both dreading it and looking forward to it. On the one hand  I really need this but on the other hand I don't want to give up all the crap that I eat and drink ;)

I thought I'd practise making parsley tea (and to see if it was actually drinkable!) and it's simple to make and doesn't taste too bad even though I would much prefer to drink water...

But there are plenty of reasons to drink parsley tea!

  • It contains a powerful antioxidant which helps to eradicate those nasty free radicals.
  • The recipe below will provide you with around 17% of your daily vitamin C needs, helping you to reduce your chances of developing cancer and diabetes.
  • Speaking of cancer, studies believe that it's possible that one of the oils found in parsley activates an enzyme which protects the body by neutralising carcinogens. 
  • Parsley is also thought to be able to fight cancer due to its power to block the proteins which stimulate cells to reproduce.

If you'd like to try making parsley tea yourself, just follow these super easy steps...

  • Drop 2 heaped tablespoons of chopped parsley leaves into a large jug.
  • Add 500ml of boiling water, cover and leave to stand for ten minutes. 
  • Strain, cool and keep covered in the fridge until it's time to enjoy it :)

Recipe Box: Mushroom Risotto


Yesterday I made my first ever risotto. Yum! I'm looking forward to making many more ;)

This recipe makes a huge amount of risotto and rice should not be reheated so if you're cooking for two then I would definitely halve all of the below ingredients.

Ingredients
  • 315g Aburrio rice.
  • 950ml chicken or vegetable stock.
  • 4 tbsp butter.
  • 2 shallots, chopped. 
  • 120g white wine. 
  • 150g frozen peas.
  • 150g broccoli, chopped.
  • 250g shitake mushrooms, chopped.
  • 43g almonds, chopped.

To the kitchen!

  • Rinse the rice in a bowl and drain and rinse several times to get rid of all the rice dust. Set aside.
  • Bring the stock to a boil and then reduce heat to simmer. 
  • Melt the butter on a high heat in a deep frying pan and then add the shallots, cooking for four or five minutes or until the onion is soft. 
  • Stir the drained rice into the butter until it's all nicely coated and cook for two minutes. 
  • Pour in the white wine and cook on high for about three minutes or until all of the alcohol has burnt off. 
  • Stir in the stock little by little and then add the peas, broccoli and mushrooms and continue to cook on a medium heat. 
  • Meanwhile, lightly toast the almonds until nicely browned. 
  • Once the rice is tender, serve up and sprinkle the almonds over the risotto. 
  • Enjoy! :)

Recipe Box: Tomato and Basil Gnocchi


 Mmmm... Gnocci. One of my favourites! But what to have with it? Well, here's a simple suggestion. It should be enough for around four servings.

Ingredients

  • 1 tbsp olive oil.
  • 1 onion, chopped.
  • 1 clove of garlic, finely chopped.
  • 30g fresh basil.
  • 800g chopped tomatoes.
  • 1 tsp brown sugar. 
  • 1 tsp Worcestershire sauce. 
  • 1 tsp dried mixed herbs. 
  • 1000g gnocchi.
  • 25g pine nuts. 
  • 2 tbsp cheese, grated.
To the kitchen! 


  • Preheat the oven to 200oC.
  • Heat the oil in a large pan and fry the onion until softened for around 5 to 10 minutes. 
  • Add the garlic and fry for a further minute. 
  • Stir in half of the basil, the chopped tomatoes, the sugar, the Worcestershire sauce and the mixed herbs. 
  • Bring to the boil and then reduce heat and simmer for ten minutes. 
  • Meanwhile, cook the gnocchi by boiling it in another pan for a few minutes until the gnocchi rises to the surface of the water. 
  • Lightly toast the pine nuts in a small frying pan. 
  • Stir the gnocchi through the sauce.
  • Serve up into four bowls and top with the pine nuts, cheese and the remaining basil.
  • Enjoy!

Geeky Gamer: Abyss: The Wraiths of Eden


Hello again!

I recently became hooked on an adventure point and click game which has become an increasingly rare occurrence as I get older, wiser and let's face it, less able to spend hours playing games! Growing up is overrated ;) I found myself with a bit of spare downtime after a run of night shifts and treated myself to a trial download of a game. I loved it so much that I had to go and buy the full version!

I tend to love the adventures which bring the scare factor. I love playing games with the lights on low and the music turned up high which inevitably makes me jump far too often but I love it! This particular  story starts when your husband-to-be goes missing while on a solo diving expedition (who does that??) so we go off in search of our one true love and find some rather disturbing creature-types underwater who appear to have kidnapped our beau. Your mission is to free him and escape with your lives but of course, as with all great adventure games, this is not a straight-forward task...

This game made me jump out of my chair several times, so much so, that I was always on edge every time I moved my character through into another area... So much fun!! And the puzzles are great, not with terribly obscure solutions as I have found in the past but real brain-teasers which are so satisfying to complete. Great story, fantastic effects and atmosphere and the backgrounds and videos are rather beautiful. My only gripe is that is wasn't long enough but then again the best games never are!

Recipe Box: Vegetarian Tortilla Lasagne!


I adore Mexican food and I could eat lasagne forever so why not combine the two? Sound crazy? It's not as insane as it sounds, I promise! It's actually super tasty :)

Introducing the Tortilla Lasagne...




Want to make this beast? Just follow the instructions below :) It serves between two and four depending on just how hungry you are!

Ingredients

  • 1 tbsp olive oil.
  • 1 onion, finely chopped.
  • 1 red chilli, finely chopped.
  • 2 cloves garlic, finely chopped.
  • 1 tsp ground cumin.
  • 1 tbsp dried coriander. 
  • 780g pinto beans, drained.
  • 400g chopped tomatoes.
  • 250ml vegetable stock. 
  • 1 bunch spring onions, sliced.
  • 325g tin of sweetcorn, drained.
  • 4 flour tortilla wraps. 
  • 100g cheese.

To the kitchen!

  • Preheat the oven to 200oC.
  • Heat the oil in a large frying pan and cook the onion until soft for about 5 minutes.
  • Mix in three-quarters of the chilli as well as the garlic, cumin and coriander and cook for 1 minute.
  • Add the drained pinto beans, the chopped tomatoes and the vegetable stock.
  • Simmer for ten minutes until the majority of the stock has evaporated.
  • Add in three-quarters of both the sweetcorn and the spring onions. 
  • Place a tortilla wrap in the base of a round cake tin.
  • Spoon in a quarter of the bean mixture, sprinkle over a quarter of the cheese and place another wrap on top of this.
  • Again, spoon another quarter of the bean mixture and cheese and place another tortilla wrap on top. Repeat twice so you end up with the last of the beans and cheese on top of the fourth tortilla. 
  • Bake for 25 minutes.
  • Once out of the oven, sprinkle the remaining chilli, sweetcorn and spring onions over the top and voila, you're ready to go!

Photography: Jake Baggaley


I particularly like photography which teaches me something and shows me the world from a different perspective. I think that's why I'm such a big fan of Jake Baggaley. He describes himself as a 'social documentary and portrait photographer'. His photographs taken inside the Chernobyl exclusion zone are particularly eye-opening. We've all heard of the tragedy but Jake's photos take us into the lives of the few survivors living within the zone and demonstrate just how isolated and forgotten these people are. His photos are beautiful yet heart-breaking at the same time.

Favourite Flicks: In Time


I wasn't too keen on watching this film. I tend to add anything I haven't seen before to my Lovefilm list which ends up in me watching a lot of rubbish. And I wasn't keen on watching a film starring Justin Timberlake because well, I couldn't imagine him being a convincing actor. 

But lo and behold, this film was a very pleasant surprise! :)

The concept is rather interesting... Imagine if money no longer existed. It has been replaced with the currency of time. So, instead of paying £3 for a coffee (I live in London!) you'd pay 3 minutes. A car? Well, that would set you back 5 years! You also get paid in time, you pay your rent in time and if you run out of time, well, you just drop down dead. You could literally watch your life ticking away, as in this picture below. Oh, and people can beat you up and steal your time. Watch your back, folks!

It doesn't stop there... You stop ageing when you're 25 and you have the potential to live on forever. This leads to a lot of confusion as to whether the man you're meeting is somebody's father, grandfather or even great-grandfather. Awkward. It's a little weird seeing Olivia Wilde playing Justin's mother. Even weirder when you find out it's her 50th! It's a strange ol' world.

The film sees Justin taking on the hypocrisy of his odd society, escaping his ghetto and seeing how the other half lives. This makes him deeply unhappy and he becomes a futuristic Robin Hood, stealing time from the rich and giving it to the poor, literally saving lives. It's a very interesting story which raises all sorts of questions about our own world.

Favourite Flicks: Zombieland


Carrying on yesterday's theme of zombies, my favourite 'zom-com' is the downright hilarious Zombieland. If you cross Scott Pilgrim with Shawn of the Dead, you'd probably end up with something resembling Zombieland.

Part post-zombie-apocalypse survival guide, part love story and a whole lot of laughs and gore, this is a little different from your usual zombie flick. Zombies have of course taken over the world and this is a tale of fighting for survival against all the odds. You'd think that this would bring the few survivors closer together, right? Wrong. It's hard to trust anybody in Zombieland. Watch out for a cameo from a Hollywood star playing himself ;) Classic! Expect a rollercoaster ride as anything goes in Zombieland.

Necessary viewing, I insist that if you haven't seen it already then you must. Enjoy!

Geeky Gamer: Plants vs. Zombies


My daily commute is an hour sat on the London Underground. Long, but it has certainly given me more time for reading and playing nonsensical games on my phone ;) My latest tube time gaming obsession has been this little gem of a game, Plants vs. Zombies from PopCap.

The aim of the game is to protect your home from a relentless zombie invasion who only want to pick your brains and eat them. Eugh! So naturally, you need to fill your garden with special butt-kicking plants to protect you and your home - a zombie assault course if you will. Be careful though, these aren't just your average slowmo leg-dragging zombies. there's everything from polevault zombies to digger zombies with a conehead zombie in between! Don't worry though, you have an equally large and varied plant arsenal to return fire with.


This game is super easy to play and very addictive. You have been warned...

Health Kick: The truth about mobile phones?

I just watched a rather scary documentary about the possible effects of electromagnetic radiation on our bodies and the world around us. The collapse of bee colonies, an increase in cancers and diseases and a whole host of other negative trends have been linked to an ever-increasing number of mobile phones, wireless telephones and the phone masts which now seem to be popping up everywhere (you can check out your home town's mast count here).

Here are a few interesting things I learnt from this documentary:

  • Everything in the world has a natural electromagnetic frequency and it just so happens that a human's frequency is exactly the same as the Earth's natural frequency. Coincidence? I think not!
  • Melatonin is our most powerful antioxidant which is produced at night when we sleep. Even a tiny bit of light can stop the production process and leave our melatonin levels looking less than satisfactory. I think I'll start wearing my eye mask while sleeping now...
  • Living near a phone mast appears to highly increase your chances of developing cancer as a small town found out to their horror. 
  • Mobile phone radiation levels are tested by using an 'average size' model skull, which does not take into account the effect on a 9 year-olds brain which is now the average age a child gains their first phone.
  • Many of the reports and research carried out on harmful effects of radiation from mobile phones are being funded by the telecommunications industry themselves. Scientists feel pressure to conform to their employer's wishes and so many of these results can not be completely trusted. 
One thing that is crystal clear is that much more research needs to be done into the harmful effects our modern technology is having on the natural world and the ways in which we can cut down or altogether stop these effects.

Beauty Bulletin: Very Berry Face Mask

Hello there!

I can be pretty fussy about face masks, or at least my face is because it tends to start feeling prickly towards the end of the recommended leave-on time... But I just found a lovely moisturising mask from those masked magicians, Montagne Jeunesse. It smells delicious, bursting with blueberries and cranberries, giving this creamy mask a beautiful rose colour.

My face is a fan, not one itchy pore to be felt. Not only that but it feels smooth and refreshed and ready to face the world looking a lot less frazzled.

Books I Love: The Hunger Games Trilogy

Wow.

Oh my goodness.

I just finished this trilogy in about six weeks. I just couldn't put this stuff down!

I'd heard all the hype which had naturally completely put me off but then my friend insisted that I simply HAD to read the books. As I'd never heard my friend raving about a book before, I figured I should finally see what all the fuss was about. And I'm soooo glad I did :)

For those of you that have seen the film, the books are a whole world darker. There's so much twisted violence in these books that there's no way this will ever be accurately portrayed in the cinema - totally not suitable for children.

I would never spoil these for you but trust me, if you haven't already read these books, DO!

Thrifty Living: Bobble Bottle

A little while ago I posted about water bottles and why it's important that you think about how you consume water. Last week, I made a step towards a healthier Hannah by investing in a Bobble water bottle.

Why, you ask? Well, these clever little bottles filter the water as you drink it! This is a very reassuring thing for anyone who has seen London tap water in a glass (bleurgh!). It only cost me £8.99 and the carbon filter works while you sip. All you have to do is replace the filter after every 300 drinks.

Worried that it's in a plastic bottle? Don't! It's free of all those nasty toxins so it's perfectly healthy.

Parents Were (Are) Awesome!

Don't believe me? Well, I give you Exhibit A: My Parents Were Awesome. This blog proves that parents were actually quite stylish once upon a time. What looks vintage now looked great on them! 

I found this photo recently. It was taken at my parents' engagement party and my parents and grandparents look fantastic! My Nan and Grandad look particularly glam ;) This is most definitely one of my favourite photos ever and I'm looking forward to finding the perfect place for it in our flat :)

Beauty: Moroccan Argan Oil


Hello!

It's quite ironic that I'm writing a post about beauty as I couldn't be further from beautiful myself right now! I've been a little sick the last couple of days but so grateful that I've had it easy compared to a lot of other people I know. Ah, the winter vomiting bug, you can't bring me down!!!

Something that has been putting a little spring in my step as well as a lot of shine in my hair is this little bottle of sunshine, Organix Renewing Moroccan Argan Oil. My hair had been so dry and unmanageable and pretty yuck over the winter but this oil really improved things! You only need to use a tiny bit (overload and you'll be a greaseball!) so it lasts a long time. It's the budget alternative to the Moroccan Oil brand but is every bit of good according to all the reviews I've seen on the Internets. I'm certainly a very happy customer anyway :)

Recipe Box: Super Easy Soft Cheese


 Cheese! I have to admit I'm not the most adventurous of cheese eaters (I generally only eat chedder, ha!) but I've always fancied having a go myself. I stumbled across a simple recipe for homemade cheese and with a little bit of tweaking, it became so easy that even a cooking amateur like me could handle it ;)

For this recipe, you'll need to gather a few simple household items. Just make sure you have a large pan which can hold over two litres of liquid, said liquid being two litres of good quality organic whole milk.    You'll also need a wooden spoon, 3 large lemons and some sort of juicing device (I just used a little lemon squeezer), a colander, a large bowl, a large piece of muslin and... string.

So if you want to make a generous 400g-ish portion of soft cheese, just follow the steps below :)


  • Slow boil the two litres of milk in the large pan, stirring regularly to stop the milk from sticking to  the pan. In the meantime, juice the lemons and aim to collect 4 tablespoons of juice. 
  • Once the milk is boiling, remove it from the heat and slowly add the lemon juice while stirring the milk in one direction. 
  • You should see the milk forming little lumps of curd (aka your future cheese!) which separate from the liquid whey. 
  • Cover the pan and leave to one side for two hours or so. By this time, your curds should have settled nicely. 
  • Line the colander with the muslin and place it in the large bowl. Slowly pour the former milk mixture into the colander.
  • Once the liquid has finished draining, gather the corners of the material together to form a tight little pocket which you should then use the string to tie together. 
  • Hang your contraption over a sink or bath so any further liquid will be safely collected and then leave it hanging for around 3 hours.


  • Enjoy your cheese! :) It should last for at least three days if kept in the fridge!

Recipe Box: Beetroot Salad





So, we're almost at the end of beetroot season and I wanted to have one final beetroot fling! I love it this messy vegetable but I rarely use it which is a crying shame if you ask me. I rustled up an easy little beetroot salad to brighten up our burger and chips dinner :)

This recipe makes enough for a good side serving for two people.


Ingredients


  • 450g raw beetroots
  • 2 tablespoons extra virgin olive oil
  • 1 1/2 tablespoons red wine vinegar
  • 3 garlic cloves, finely chopped
  • 3 spring onions, finely chopped
  • Salt
To the kitchen!

  • Pull off the roots and cut all of the stalks down to about 2 cm. 
  • Gently, without splitting the skins, rub the beetroots under cold water to get rid of any dirt. 
  • Place all of the beetroots into a pan and pour boiling water over until the beetroots are completely submerged in water. 
  • Bring it to the boil, cover and reduce to a medium heat and cook for 30-40 mins until the beetroots feel tender when you gently pierce them with a sharp knife. 
  • In the meantime, mix the oil, vinegar, garlic, onions and salt in some kind of sealed container in which you can shake all the ingredients until they are well mixed. I used a plastic tupperware box but you could also use a jar.
  • Once the beetroots are tender, drain and rinse them under cold water until they are cool to the touch so you can peel away their skins. 
  • Slice the beetroot to the desired size for your salad.
  • Put in a bowl and cover with the dressing you already made. Cover and leave to chill in the fridge for at least an hour. 
  • When ready, simply toss the salad and serve!

A Trip Down Memory Lane


For the past couple of months I've been working on clearing out a couple of boxes of old cassette tapes I've kept ever since I was at school. I've always loved music and listening to the Top 40 chart on the radio was my favourite way to spend entire Sunday afternoons. My own music collection was started with a few cassette tapes, my very own hi-fi (I was so proud!) and a little help from my Dad. I'd record all of my favourite songs from the radio so I could listen to them on my walkman to and from school :)

By going through my old cassette collection, I've found so many old favourites which I had completely forgotten about!

My lovely old hi-fi is long gone but my Dad lent me his new gadget so that I could capture the old music and store it on our computer. Clever, huh?


So this is the little legend, the Ion Tape Express (I think this is a newer version than my Dad's) which is a cassette to MP3 convertor. It is so easy to use and it has meant that my entire music collection is still in tact even after I've cleared away my boxes of cassettes ;)

Something else I found super useful - when I couldn't remember the track name or even the artist of some of the songs I'd recorded, I used SoundHound. This is an app which will find all the information from a snippet of any song you play. And I do mean ANY song as I had no problems finding all the info I needed! Sometimes, I had to play it a couple of times to get a hit, but it never let me down!

So my cassette tapes are sorted. Now the question is what can I do with them... :)

The Audio A-Z: A


I have decided to open up and give you an all-access look at my personal music collection, warts and all! Being a sentimental human being, I've still got a lot of my childhood favourites on tap. This all makes for an 'interesting' contrast with my more recent rockier tastes ;) So occasionally I'll be posting about bands and artists I love/ have loved and any mildly entertaining tales I may have about them...

So, fittingly, first up in my collection is a British band called 'A'.

 I first heard them on the radio when I was about 16 or 17 and loved their rocky sound. I had just recently started listening to more alternative music so I gobbled this up. Before then I'd only really heard chart music and suddenly this whole other musical world opened up before me. It was a very exciting time in my life and certainly changed my whole direction!

Funnily enough, the main vocalist from A, Jason Perry, is now a producer and has worked with a few of my more recent favourite bands. I clearly dig his style! I've never seen A live but fortunately they have a habit of playing reunion shows so maybe one day :)

So without further ado, here are my favourite tracks from A!


The track that got me hooked was 'Nothing', their lead track from their third album 'Hi-Fi Serious'. It's my favourite A song :)



And again from 'Hi-Fi Serious', a song called 'Starbucks'. I loved all this 'sticking it to the man' music in my late teens. Catch-y. But not sure about the visors ;)

Life. Lately.


Happy New Year!

I can't believe that it is already 2013! How crazy is that??

Life has been good lately. Hectic but incredible. Here is a quick summary of what has been happening in my life recently!

So I turned 28... I spent my birthday with my boyfriend and we had a London tourist day! Can you believe I've lived here for 4 1/2 years and yet still hadn't been on the London Eye or visited the London Dungeons?? Well, now I have! ;)

We were unable to take photos at the London Dungeon so I can't show you how good it is but wowza! It was good. In fact it was really good. Although it is a little pricey, the whole experience lasts for around 90 minutes, being led from creepy room to even creepier room and I was loving every minute of it! I'm not going to tell you anything as I wouldn't want to spoil the surprise but if you ever get the chance, I urge you to go! Like now, if you can!

My second treat was FINALLY going on the London Eye! We chose to go in the evening as I think the London lights look magical in the dark and I was not let down. The city looked beautiful :)

Last month we both finally got some time to concentrate on making our flat feel more homely as well as making it look pretty for Christmas! What a difference our efforts made! We unpacked most of the boxes (yes, we still hadn't unpacked...) and moved a few pieces of furniture around to make room for our lovely Christmas tree. Home sweet home!


And... I'm saving the best for last here... We have a new addition to our home. We got a kitten!!! Funnily enough, I'd been planning on buying guinea pigs for weeks. I'd even almost bought two the weekend before but there was no suitable cage at the time so I had to let them go. So take two of buying guinea pigs and we tried a different pet shop. This one had an adorable little kitten in a cage who shyly crept up to us and watched us with the most beautiful blue eyes. I think it was love at first sight. We both fell for her! We looked around the rest of the pet shop but we couldn't get interested in anything else. So we went back to her and started discussing whether we could actually look after a cat in our home properly. I couldn't even believe we were having this chat as my boyfriend has told me many times that he is not a cat person. But he was as in love with her as I was! We chatted to the store owner and asked everything we needed to ask (which was a lot as we knew nothing about caring for cats!). In the meantime, our little cat was sick and my rescuing instincts kicked in and I knew there was no going back. So we bought her. I still can't believe it!

So, I introduce you to our new little friend, Polly! Isn't she the cutest??


We called her Polly because she sits on your shoulder like a parrot. It's her favourite place :) She has settled in fast and already struts around like she owns the place. She stopped being sick after a couple of days and she's now eating like there's no tomorrow! She's already growing so quickly!!!
