Recipe Box: Cucumber Maki




I love Japanese food and I have always wanted to give it a go myself so when I found a sushi kit, I HAD to try it  :)

So want to know how to make maki? There's a knack to it, that's for sure!

In my kit I received a bamboo rolling mat, 150g dry sushi rice in a bag, two sheets of nori (seaweed sheets) and 30ml rice vinegar. 

First of all you have to prepare the rice. To do this, soak the rice (still inside the bag) in a medium-sized pan of water. Bring it to the boil and simmer on a low heat with the lid on for 11 minutes. After this time, drain the water and return the rice (yep, still inside the bag) to the pan and replace the lid and leave to steam for 25-30 minutes.

In the meantime, prepare your filling. I cut strips of cucumber to 1-2cm thickness and to the width of the nori sheet. You can also use carrot, avocado or any number of other fillings! 

Once the rice has cooked, carefully remove the rice from the bag and into a large bowl. Be careful though, the rice will be very hot! Stir in the rice vinegar and leave until the rice is cool enough to handle. Mine was fine after a few minutes. 


Now for the messy part! Roll out your bamboo rolling mat and place a sheet of nori on top. Spoon half of the rice onto the nori, evenly spreading it across the sheet but leaving a gap of about 1 cm at each end so you can seal the roll. 

Then, and take your time over this part, start rolling the mat away from you, bit by bit, shaping the roll as you go. 


Eventually you should end up with something resembling this...


Make sure the end of the nori is pressed into the roll, sealing it by running a little water along the inside edge and pressing into the join with the mat. 



Repeat with the rest of the ingredients to make your second roll. Next, put your rolls onto a dry wooden chopping board and with a sharp slightly dampened knife chop them in half. Then take each half and cut it into four pieces. Et voila! Well, practice makes perfect ;)

Televisual Treats: Merlin


Hello!

Things should be calming down for me soon, hurray! We've finally found a flat we love and we're going to be moving to East London in 3 weeks. I've never lived over in East London before so I'm looking forward to a new adventure :) We should probably start packing soon... Ugh!

In the meantime, I wanted to tell you about a show I adore. It goes by the name of Merlin...


The show follows Merlin and Arthur and their developing friendship from before the legend begins, a prologue of sorts. The sets and effects are gorgeous, and I love escaping into the world of Camelot. But what I love most about this show is how much it makes me laugh! I'm eagerly awaiting the fifth season which I believe is due to return this autumn :)

Televisual Treats: Tin Man



I just watched the Syfy channel three-part mini-series 'Tin Man' and loved it! First of all, it stars my biggest girl crush Zooey Deschanel as D.G. who doesn't feel at home in the town she grew up in and can't wait to leave and start exploring the world. She has vivid dreams of another land from stories her father has told her. When a tornado hits the farm, she is transported to another place which is starting is starting to look very familiar despite her never being there before...

It's a wonderful twist on the old Wizard of Oz story, set long after the original plot. The soundtrack is epic and reminds me of the Harry Potter films which can only be a good thing for me :) and the other world settings are beautiful. It's more than worth a watch!

Books I Love: Something Borrowed


My oh my am I flying through books now that I'm spending a lot of time travelling around London in  search of our next flat!

Since my last book post, I've read another two books! At least one of my goals is going to plan... I think I'll tackle the Spanish book next ;)

I had to tell you about Something Borrowed by Emily Giffin. I'm not usually one to go for the girly girl book, but this one I could not put down. Glued to my nose until the end! It's about two long-time best friends, one of which thinks the world revolves around her and has everything and the other who has always put her best friend first and feels like she has nothing as her 30th birthday fast approaches. It all changes on her birthday night, but for the better or the worse, it's not clear at first. I don't want to give much away as it is such a good read, full of drama and the type of people I'd run away from in real life :) I couldn't help rooting for the heroine despite some of her questionable decisions! If you give it a shot, let me know what you think ;)


PS I just ordered the sequel 'Something Blue' and found that there is a film version! Consider it on high priority from Lovefilm ;)

Linked Up!


Here are a few links I've been loving lately. I seem to be getting more and more interested in natural products, health and sustainable living (thank you Mrs. Kingsolver!).

Are your favourite cosmetics comprimising your health? Check the EWG's Skin Deep Cosmetic Database to find out! I was shocked to see the database's conclusion on my current foundation, maybe that's why my skin is constantly breaking out?

I'm a vegetarian but I don't necessarily believe that everyone should be a vegetarian. I think we should treat animals as kindly as possible and use sustainable organic farming methods. There are too many cruel practices in the world and I hope that the situation improves and quickly. I'm working my way through this eco veg living bible, I imagine it will open my eyes even further to what is really going on in our world.

Books I Love: Animal, Vegetable, Miracle


Hello!

In amongst the frantic flat hunting and working some crazy hours, I've managed to indulge myself in one of my favourite hobbies, reading. Ok, by indulging I mean using my train commute and time while waiting for estate agents... I have been using these little quiet moments to briefly lose myself in an incredible book. It is written by the wonderfully inspiring Barbara Kingsolver and her family and is not only the story of their year of eating only locally-produced food (most of which is grown and raised by their own hand) but it is also jam-packed with seasonal recipes and information about the food industry. It really is eye-opening and made me feel a new respect for farmers and their way of living. It's a perfect balance of adorable family tales with hard-hitting facts. I'm now craving some garden space ;) Imagine being able to grow your own salad, freshly picking it for dinner... yum! I'm looking forward to trying out some of the recipes too :) I'll let you know how I get on!
